The reach-in on the line is the hardest working box in the building and the one nobody ever touches. Its condenser sits underneath or on top, breathing the same air as the fryer, and it pulls that air through the coil every minute you are open.

When that coil loads up the box does not quit — it starts struggling, which is worse, because struggling is invisible. The compressor stops cycling off. The unit gets loud enough that the crew mentions it. Product on the top shelf and near the door drifts warm during a rush and goes back down after close, so nobody catches it on a thermometer. What the technician actually does

  1. We record the box temperature and check how the unit is cycling before touching anything.
  2. The condenser grille comes off and the coil is inspected — that is where the problem almost always is.
  3. Light: coil and condenser cleaned on site with degreasing coil cleaner, fan blades wiped, drain checked.
  4. Deep: the fan and guard are removed, the coil is washed through with chemicals, and the drain pan and line are cleaned out.
  5. Door gaskets are checked while we are in there — a torn gasket undoes everything a clean coil gains — and the unit is restarted and re-checked.

How often should a reach-in be cleaned?

Every six months in a working kitchen. If the unit sits near the fryer or the grill, quarterly — that coil loads up with grease far faster than people expect.

What is the difference between Light and Deep?

Light cleans the condenser and coil on site with degreasing chemicals, about seventy-five minutes. Deep removes the fan and guard so the coil can be washed all the way through, and cleans the drain pan and line. Deep is for a unit that has never been serviced or sits in heavy grease.

Is it per unit?

Yes. Most kitchens have several — tell us how many when you book and we bundle the visit rather than charging each one separately.

My reach-in is loud. Will cleaning fix that?

Often, because most of that noise is the compressor running nonstop trying to reject heat through a clogged coil. If the noise is mechanical — a failing fan motor or bearing — we identify it during the service and tell you what it needs.

Do you check the door gaskets?

Always, at no extra cost. A torn gasket pulls warm humid kitchen air into the box continuously, and it will cancel out everything a clean coil gains.
