Ice is food. The health department treats it that way, and the ice machine is one of the first doors an inspector opens — because the inside of an evaporator is dark, wet, and sitting at exactly the temperature slime likes. Most operators have never seen the inside of theirs. The pink or grey film on the curtain is not a maintenance issue at that point, it is a violation.

Then there is the part that costs money quietly. Water around here leaves mineral scale on the evaporator plate, and scale is an insulator. The cubes take longer to release, so the harvest cycle stretches, so the machine makes fewer batches in a day. Nothing looks broken. You just run out of ice at 9pm on a Saturday and nobody can explain why, because the machine ran all day.

What the technician actually does

  1. The machine is taken out of service and any remaining ice is removed from the bin.
  2. Clean Cycle: the manufacturer’s clean cycle is run with nickel-safe solution to dissolve scale from the evaporator, then every surface and the bin are sanitized.
  3. Deep Teardown: the evaporator, curtain, water trough, distribution tube and pump come apart, and each part is descaled and sanitized individually.
  4. Water lines, float and drain are checked, and the filter condition is reported to you.
  5. The machine is reassembled, restarted and watched through a full harvest cycle before we sign off.

How often should a commercial ice machine be cleaned?

Every six months at minimum, and quarterly for bars, high-volume kitchens and anywhere the water is hard. Most manufacturers require it in writing to keep the warranty valid.

What is the difference between the Clean Cycle and the Teardown?

The Clean Cycle runs nickel-safe solution through the machine and sanitizes the surfaces and bin — the right call for a machine on a regular schedule, about ninety minutes. The Teardown takes the evaporator, trough, distribution tube and pump apart and descales each piece by hand. That is what a neglected machine or a scale problem needs.

Will this help me pass a health inspection?

It addresses exactly what gets flagged: slime and mold on the evaporator and in the bin. We also leave the machine documented so you can show when it was last serviced.

Does the price depend on the size of my machine?

The posted price covers machines producing up to 1,300 lbs per day, which is most bar and restaurant units. Larger production machines get their own quote — call or text and we will price it properly.

Will cleaning bring my ice production back up?

If scale is the limiter, yes — a descaled evaporator releases ice faster and completes more harvests per day. If the machine has a mechanical or refrigeration fault, we will find it during the cleaning and tell you straight.
