Commercial Oven Repair in South Jersey: Why Ovens Stop Heating and What Gets Fixed
The short answer
A commercial oven that will not heat, cooks unevenly or shuts off in the middle of service usually has one of a short list of problems: the ignition system on a gas oven, a heating element or contactor on an electric one, a thermostat or sensor that reads wrong, a convection fan, or a door that no longer seals. Our technicians repair convection, deck, pizza and combination ovens in restaurants, bakeries and hotel kitchens across South Jersey.

What to check first
Gas or power
Gas valve open, breaker on, cord and plug seated. Many ovens will not run with the hood off.
What the display says
Write down any error code or blinking light before turning it off and on.
Door and gasket
A door that does not close fully lets heat out and can stop some ovens from heating.
Fan noise
On a convection oven, listen for the fan. Silence or grinding points to the motor.

Common commercial oven problems
The oven will not light
On gas ovens the igniter or pilot, the flame sensor or thermocouple, the safety valve or the gas valve. A slow or weak ignition that finally lights is often a dirty or failing igniter.
It heats but never reaches temperature
A failed element on electric models, a burner that is dirty or underfired on gas, a thermostat or probe that reads wrong, or heat escaping past the door.
Uneven cooking
On convection ovens the fan motor, the fan blade or a reversing control. On deck ovens, a burner or element on one deck, or a stone that cracked.
It shuts off during service
A high-limit tripping because a fan stopped, a flame sensor losing the flame signal, or the hood interlock.

Keeping an oven in service
- Clean the cavity and the convection fan guard; grease on the fan slows it down.
- Check door gaskets and hinges every few months.
- Have burners cleaned and adjusted, and thermostats calibrated, at least once a year.
- Put it on a maintenance plan with the rest of the kitchen.
Repair or replace an old oven
Commercial ovens are built to be repaired, and most failures are a part. Replacement is worth pricing when the cavity or burner box is cracked or rusted through, parts are no longer made, or the oven keeps failing. The written quote lets you compare.
Repair or replace?
| What to look at | Repair usually makes sense when | Replacement is worth pricing when |
|---|---|---|
| The problem | An igniter, a thermostat, a valve, a safety or a heating element. | A cracked burner box, a rusted-through cabinet or failures that keep coming back. |
| The equipment | Commercial equipment that is built to be repaired and has parts available. | Parts are no longer made for it, or it no longer fits the menu. |
| The cost | The repair is a small part of the price of new equipment. | The repair is close to the price of new equipment. |
A technician tests it first and gives you a written quote, so you can compare repairing with replacing before you decide.

Questions people ask
Why does my commercial oven take so long to light?
A weak or dirty igniter, a flame sensor that is slow to prove the flame, or low gas pressure. A technician measures each one.
Why does my convection oven cook unevenly?
Most often the convection fan or its motor, a damaged fan blade, or an element or burner that is not heating on one side.
Can you calibrate the thermostat?
Yes. The technician checks the actual temperature against the setting and calibrates or replaces the thermostat or probe.
